This can be seen in the photo in proportion to the hands. The structure is loose and can be pierced with a finger, with little effort. The fibers are obvious, visible and poorly interconnected. The so-called “head” is attached to it from the thick side. This piece can be torn off almost by hand. Between the head and the notch itself there are obvious veins, which begin there and continue to the center or to the end. On the other hand, there are a few veins, but they are translucent. They are removed only so that the piece is not deformed during heat treatment. Almost no fat. You can not even clean it. Marbling depends on fattening and breed: from completely fat-free to beautiful marble.
